It's that time of year again...


I have zucchini up the wazoo. I figured that this year I would break out the food saver and vacuum seal my goodies. So this morning I got up, washed my pile of gargantuan zucchini and proceeded to start shredding. I bagged the first batch and stuck it in the food saver to vacuum seal...pressed down on it for 5 minutes and ... nothing. So here I am...with a bag of shredded zucchini and a food processer full of more zucchini and no way to vacuum seal it. The recipe seach began. I sealed the bag I had zucchini in and stuck it in the freezer, I figured I'd pull it out fairly soon to make something out of it, and if it goes bad or get freezer burnt I'll just add it to the worms, they'll love it. The rest...well, I went for the old stand by...zucchini bread.

The recipe called for 4 cups of zucchini, I had 8 so I doubled the recipe that way I wouldnt have left over shredded zucchini staring me in the face.

First I put in the eggs..8 eggs...that's a lot of eggs. Makes me wish my chickens would start laying :-P
Then I added the sugar...


Then the butter (the recipe called for "fat"... I think that's the first time I've ever seen that..."Fat")

Then I added the vanilla and the spices..cinnamon and ginger..

Ok...now its starting to resemble something nasty. I actually had to stop and walk away because it was making me a little "gaggy". I was really hoping adding the flour would make it look better....

Flour...8 cups of flour...that's a lot of flour.

And it didn't help...it still looked icky :-P

In the pans awaiting cooking...where I will realize I forgot to drain my zucchini...and all that "fat" will leak out into the bottom of my oven...and smoke will roll through my house and children will run screaming that the world is coming to an end....*cough cough* Please forgive any spelling errors...apparently zucchini, when burnt, creates a toxic cloud *cough*..that blinds people and animals alike...Oh...you just have to love this big green monster squash..what excitement would we have without it :-P

I actually didn't think that looked gaggy. ;> And thanks for reminding me I gotta go make some zuch bread. I blanched and dried a bunch last night, but there's a kazillion more where that came from. (and I'll remember to drain it...heh heh)

Your bread looks so yummy! Would you believe, NOT ONE of my zucchini plants came in. Not one. Neither did my pumpkins or my melons. We had a very cool and rainy spring, followed by a cool summer. I told hubby that next year we'd have to make cold frames.

So I guess I'll just sit here, looking at the lovely photos of your bread and drooling on my keyboard ;D

As a dear friend, I gagged with you! But the finished product looks simply yummy! I'll have to grow some *if* my new greenhouse gets built this fall.
